// vegan pumpkin soup //

Hi! Apparently it’s fall now, which means: Cozy Sundays in bed, colourful leaves everywhere, it’s getting cold af, and of course: Pumpkin! To celebrate the arrival of fall I went straight into the veg-store and got a big old pumpkin. Here you go- here’s what I did with it :)

You need:

  • one medium-sized pumpkin
  • about 8 potatoes
  • two onions
  • 1l vegetable broth
  • 150ml coconut milk
  • Oil (I used coconut oil)
  • Ginger
  • Cinnamon
  • Salt & Pepper
  • paprika powder

And that’s how it becomes a soup:

1.) Chop the onions and put them in a pan together with the oil and the ginger

2.) Peel the potatoes and chop them into small pieces; add them to the pan

3.) Leave the potatoes and the onions in the pan for about 5 min and chop the pumpkin while you wait

4.) Put enough vegetable broth into the pan to cover pumpkin and potatoes

5.) Let it cook for 15min ish; you can find out if they’re ready by taking a fork and pricking it into the potatoes

6.) Blend it with a stick blender as soon as the veg is soft, then put the pan back on to of the oven and add coconut milk and spices

7.) Enjoy :)



PS: The soup was gone within two days, so it can’t be that bad.
